Its robust beefy flavor makes it a natural for spicier dishes, such as fajitas. Carve thinly across the grain to promote tenderness. Great with a baked potato as a steak. 

Marinate for a few hours, trim the connective tissue before cooking and season to your choice. Farmer Dale likes salt and pepper. Use thermometer to cook to your preference of taste.

One Sirloin Flap  Steak will feed 6 to 8 people. Pictured is one steak after trimming, cut into steaks or cook then cut into steak. This is a popular cut in the New England area.
